Today’s students thrive in a self-service dining environment. Capturing space for an enlarged servery, the renovation has improved traffic flow, allowing residents to easily access a wide variety of healthy food options. Self-service buffet bars allow residents to make their own salads and choose from a selection of main course meals and side dishes, determining their own portion sizes. Separate cooking stations offer made-to-order options including grilled items such as hamburgers, veggie burgers, chicken, and hotdogs. Students can also make their own waffles and sundaes. In collaboration with the Yale Sustainable Food Project, Silliman offers several menu items each day that include locally grown, organic ingredients.
